  • Peel and thoroughly wash the potatoes. The type of potatoes used doesn't matter; they can be white or red, new potatoes, etc. The important thing is that the size of the potatoes is neither too large nor too small.
  • Using a knife, slice each potato crosswise, as if you were cutting slices, but stop when you reach the bottom, leaving about a centimeter (0.4 inch). The distance between the slices should be approximately half a centimeter (0.1 inch). Repeat this process with each potato, then place them on a baking tray.
  • Mix the olive oil with finely chopped aromatic herbs and brush the potatoes with the mixture, using a pastry brush. Finally, place the tray in a preheated oven (180 °C / 356°F) and bake until the potatoes begin to fan out slightly, as shown in the picture. Once they start to fan out, pour the olive oil mixed with herbs (the one that's left) between the fanned slices, and sprinkle with salt to taste. Bake until they acquire a golden color, then remove them from the oven and let them cool. Enjoy your meal!

Notes

In this recipe, I recommend using fresh aromatic herbs for the best flavor. Of course, if you don’t have fresh herbs on hand, dried ones are also acceptable. Additionally, I recommend using extra virgin olive oil.
