Baked pork brain pudding
This dish is a traditional Romanian dish that is made with pork brains, eggs, cream, and cheese.

Ingredients
1 kg pork brain
6 eggs
100 ml cream
200 g cheese Emmental or Cheddar
50 g butter
1 tbsp vinegar apple or grape vinegar
1/2 tsp salt
1/2 tsp ground black pepper
green parsley optional
Instructions
- Wash the pork brain thoroughly and drain it. If the brain is frozen and/or mechanically separated, be sure to wash it very well, as there is a high risk of finding very fine pieces of bone, which would not be very pleasant.
- Bring a pot of water to a boil. Add a pinch of salt and a tablespoon of vinegar to the water. Once the water is boiling, add the pork brain meat and simmer for 5 minutes. It should not be cooked through, as it will finish cooking in the oven. After boiling, drain the brain meat in a colander.
- Beat the eggs well, add salt and freshly ground black pepper to taste. Add the sour cream and then add the pork brain meat, mixing gently with a spoon. Try not to break up the brain too much.
- Grease a baking dish with butter. We use a glass (Pyrex) baking dish with a lid. Add the mixture (brains mixed with eggs and sour cream) and grate the cheese over the top using a coarse grater. Preheat the oven to medium heat (180 °C (356 °F)) and bake the pudding for about 20-30 minutes. The cheese will melt and form a deliciously crispy crust. Enjoy!
