Bean and onion salad

400 g canned red beans 1 can
1 green onion red, green, or white—your choice
1 tbsp olive oil
1 tbsp balsamic vinegar or other type of vinegar
salt to taste
Instructions
- Open the can of beans and drain it into a sieve. Rinse the beans thoroughly under running water. After draining well, transfer the beans to a deep bowl to allow for easy mixing.
- Peel, wash, and finely chop the onion. You can use any type of onion, but red onion is especially recommended for this recipe. I opted for green onions, as they were readily available.
- Add the chopped onion to the beans. Drizzle with a splash of olive oil and a tablespoon of balsamic vinegar. Mix well to combine.
- Season with salt to taste. For extra flavor, you can add a pinch of chili pepper or finely chopped fresh chili.
