Who doesn’t love bean and sausage stew?! Well, there are certainly people who don’t like this dish, I won’t deny it. I even know a few such people. They don’t know what they’re missing 🙂. Whether it’s a holiday or just an ordinary day, traditional bean and sausage stew is always a hit. If we have some pickles on the side, it’s even better. Our favorites are pickled cucumbers. Since I was a child, my mother would make us a big pot of beans. Sometimes with sausages, sometimes with smoked meat—it didn’t matter. As long as it was pork. We’d eat until we couldn’t eat anymore 🙂. Let me share our recipe for bean and sausage stew.
Beans and sausage stew
This is a dish frequently eaten in Romania (and not only) made with beans and pork sausages. It is usually served with pickles (pickled cucumbers or green tomatoes) as a side.

Ingredients
- 500 g beans
- 500 g pork sausages
- 4 g onions
- 3 tbsp tomato paste or 200g tomato juice
- 50 ml sunflower oil
- 3 bay leaves
- salt to taste
- ground black pepper to taste
Instructions
- We clean and thoroughly wash the beans. We put them in a pot with water to soak overnight. The next day, we bring them to a boil. Let them boil for about 20 – 30 minutes, then change the water. Be careful not to harden the beans; replace the water with hot water. Repeat this process 2 or 3 times. After the beans are cooked, we drain them in a colander.
- We put the sausages in a pan to fry. You can leave them whole or cut them into smaller pieces, it doesn't matter. After frying them, we take them out and set them aside.
- We clean and finely chop the onion. We sauté it in the oil left from the sausages. After it starts to change color, we add tomato paste and a few cups of water. We also add the bay leaves. Season with salt and pepper to taste. Instead of tomato paste, you can use tomato juice. Let it come to a boil, then add the beans and sausages. If you want it to be more soupy, add more water. Let it simmer for a few more minutes, then turn off the heat. This dish goes very well with pickles (pickled cucumbers, green tomatoes, etc.). Enjoy your meal!
