This breaded brain recipe is quite simple and resembles a classic schnitzel recipe. Personally, I love this dish. Just like meatballs or chicken schnitzels, I could eat breaded brain all day long. I know it’s a fried dish containing pork, which isn’t exactly the healthiest option… But every now and then, it’s worth indulging in this delicious recipe. And if we find fresh pork brain at our local butcher, it’s even better!

Breaded Pork Brain
this version uses pork brain, but the dish can also be made with veal or lamb brain. It's a traditional Romanian dish, often served as an appetizer or main course.

Ingredients
1 kg pork brain
150 ml sunflower oil for frying
3 tbsp wheat flour
salt to taste
ground black pepper to taste
2 tbsp vinegar or lemon juice
Instructions
- Rinse the pork brain carefully under cold water to remove impurities. If necessary, remove any membranes or blood vessels.Boil water with salt, vinegar (or lemon juice), and optional aromatics like bay leaf and peppercorns.
- Place the brain gently into the simmering water and cook for 5 minutes to firm it slightly.Remove with a slotted spoon and let it drain on a paper towel. Allow it to cool.
- Slice the brain into smaller portions, if desired.Season with salt and pepper.Prepare three bowls: one with flour, one with beaten eggs (seasoned with a pinch of salt), and one with breadcrumbs.Coat each piece of brain in flour, then egg, and finally breadcrumbs. Ensure even coverage.
- Heat oil in a deep pan to about 180°C (medium-high heat). Test the oil with a breadcrumb—if it sizzles and browns gently, it’s ready.Fry the breaded brain pieces for 2-3 minutes on each side until golden and crispy.Remove and place on paper towels to absorb excess oil.
- Serve warm as an appetizer or main dish.Accompany with lemon wedges, tartar sauce, or a light salad.Pair with sides like mashed potatoes, roasted vegetables, or fries.Enjoy your meal! 🤗
