Chicken dish with onions and lemon

- 600 g boneless chicken breast
- 1,5 kg onion
- 350 ml tomato juice
- 1 lemon
- 200 g olives preferably pitted olives (canned)
- 50 ml sunflower oil or olive oil
- 1 tsp salt to taste
- 1 tsp ground black pepper to taste
Instructions
- Wash the chicken meat thoroughly, cut it into bite-sized pieces of about 1cm, 1 1/2 cm and put it in a pot to fry for a few minutes. Leave it until it starts to brown. You can also add a glass of beer to make the meat even more tender. I recommend not putting a lid on the pot, as store-bought chicken releases a lot of water. Once the chicken is browned, remove it from the pot and set it aside in a bowl.
- Peel, wash, and chop the onion into medium-sized pieces. Add the chopped onion to the pot from which you removed the chicken. Cook the onion over medium heat, stirring occasionally, until it turns slightly golden. Avoid overcooking the onion. Add the tomato juice or tomato paste. If using tomato paste, add a cup of water for a juicier dish. Simmer the mixture for another 5-10 minutes. Add salt and pepper to taste.
- Return the fried chicken to the pot with the onions. Stir gently to combine and cook for a few more minutes. Just before serving, add thinly sliced lemon and olives. A squeeze of lemon juice can also be added to individual servings. This dish can be enjoyed hot or cold.Bon appétit!
