The recipe is quite simple; the important thing is to use the freshest ingredients possible. If you can source chicken raised in the countryside, even better. It will result in an even more delicious soup. You can use the leftover meat in another recipe or simply fry it. This recipe shares a simple method for making chicken soup with vegetables, ideal for warm seasons when heartier soups aren't preferred.   • First we wash the chicken very well and put it in a pot to boil it. Along with the chicken we put the two cleaned and washed onions together with the celery root that we have cleaned and washed beforehand.
    Add enough water to cover the chicken and vegetables. Depending on the type and size of the chicken (whether it's free-range or not), let it boil for between 60 and 120 minutes. Occasionally, with a slotted spoon or a skimmer, remove the foam that forms on top of the soup.
  • When everything is almost cooked, add the potatoes and carrots cleaned and washed in the water in which the chicken is already boiling along with the other vegetables. We don't put them in at the beginning so they don't overcook and crumble.
  • After everything has boiled, remove the vegetables and throw them away. Keep the carrots and potatoes in the soup. Add salt and pepper.
    We can either eat the meat as it is or repurpose it for another dish. Alternatively, we can debone it and add it back into the soup.
  • At the end we add the noodles and let it boil for a few minutes.
  • Take the pan off the heat and let it cool for a few minutes.
    Meanwhile, chop one of the two bunches of parsley. After the soup has cooled slightly, add the chopped parsley to it and cover the pot with a lid. The other bunch of parsley will be added directly to the plates when serving the soup.
