Chicken Stew with Cream and Mushrooms

The recipe for chicken stew with cream and mushrooms is very similar to the classic chicken in cream sauce. However, this time we will use chicken thighs instead of chicken breast. We will also include mushrooms in our dish. This traditional Romanian meal is not only very flavorful but also quite hearty. As with most of our recipes, I recommend using sour cream with a minimum of 20% fat or homemade cream. Polenta is an excellent alternative if you prefer not to serve this dish with bread.

  • Wash the chicken thighs thoroughly and boil them for a few minutes.
    Once partially cooked, cut the chicken into pieces and fry it for a few minutes in oil until lightly golden.
    Add the washed and sliced mushrooms to the pan with the chicken and cook together briefly.
  • Separately, finely chop the onion and sauté it in a bit of oil until it begins to soften and turn a light golden color.
    Add the tablespoon of flour and mix well.
    Pour in the sour cream, stirring continuously over low heat to avoid lumps.
    If you want a thinner cream sauce, add a bit of the broth left from boiling the chicken.
    Crush the garlic cloves and add them to the sauce. Season with salt to taste.
  • Add the fried chicken and mushrooms to the sauce. Let it simmer for a few more minutes to allow the flavors to combine, then turn off the heat.
    Remove the pot from the heat and allow it to rest for a few minutes. Finally, garnish with chopped fresh dill.
  • Serve the chicken stew hot, alongside polenta or fresh bread, depending on your preference.
