Let’s explore how to prepare this delightful dish step by step! If you don’t have pork tenderloin on hand, fear not! You can substitute it with boneless pork chops or pork leg. Each type of pork brings its own unique flavor and texture to the dish. Boneless pork chops may require slight adjustment to cooking time since they can sometimes dry out quicker than tenderloin, while pork leg offers a richer taste due to its higher fat content, making it incredibly juicy. Choose the freshest meat possible, and always opt for a younger pork cut for optimal tenderness. When shopping, check for quality cuts at your local butcher or grocery store and consider using fresh herbs and spices to enhance the meat’s flavor further. Fresh rosemary, thyme, and garlic can make a significant difference in creating a mouthwatering dish.

Creamy Pork Tenderloin with Mushrooms

Equipment

Ingredients
1 kg pork tenderloin or boneless pork chop/pork leg
300 ml heavy cream
1 onion
4 garlic cloves
500 g wild mushrooms or whatever you have available
1/2 tsp salt to taste
1/3 tsp ground white pepper to taste
1 tbsp butter
50 ml cognac
1/2 lemon for the juice
3-4 sprigs green parsley
Instructions
Prepare the Pork
- Slice the pork tenderloin into 1.5 cm thick medallions. Rub the slices with a little sunflower or olive oil, then season with salt and pepper. For extra flavor, you can add a pinch of thyme or fresh rosemary. Cover and let the meat rest at room temperature for at least 30 minutes.
Sear the Pork
- Heat a drizzle of oil in a large frying pan. Sear the pork slices over medium-high heat for 2–3 minutes on each side, just until golden brown. Avoid overcrowding the pan; work in batches if necessary. Remove the cooked pork and place it in a glass bowl with a lid to keep warm.
Sauté the Aromatics
- In the same pan, add a tablespoon of butter. Sauté the finely chopped onion and minced garlic until the onion becomes translucent and fragrant. Pour in the cognac and let it simmer until it evaporates. (Be cautious if you have a gas detector, as it might trigger.) Add the lemon juice and stir to combine.
Cook the Mushrooms
- Add the sliced mushrooms to the pan, along with a pinch of salt and white pepper. Sauté the mushrooms until they release their moisture and start to brown slightly.
Make the Creamy Sauce
- Lower the heat to medium and stir in the heavy cream. Let the sauce gently simmer for a few minutes until it slightly thickens. Return the seared pork medallions to the pan, along with any juices they’ve released. Simmer everything together over low heat for another 5 minutes to allow the flavors to meld.
Garnish and Serve
- Sprinkle the dish with freshly chopped parsley and cover the pan for a couple of minutes to let the flavors infuse. Serve warm with roasted potatoes, creamy polenta, or even crusty bread to soak up the sauce.Enjoy!
Notes
Chef’s Notes
- For an extra layer of flavor, you can use baby portobello mushrooms or add a dash of smoked paprika to the cream sauce.
- Don’t skip the cognac—it adds a wonderful depth to the dish. However, if you don’t have it on hand, a splash of dry white wine works as a substitute.
