I want to propose a soup that is super easy to make, very tasty but also light and healthy at the same time. I inherited this recipe for tomato cream soup from my mother. Although I am a meat lover (almost any kind ), I sometimes feel the need to eat something lighter. For this soup, I used homemade tomato juice. I recommend this recipe for preservative-free tomato juice.

Creamy tomato soup with carrots and rice
This is a very easy soup to make, light but also very tasty. You need very few ingredients, which are cheap and easily accessible.

Ingredients
- 1 l tomato juice here you can find our recipe
- 50 g rice
- 2 carrots
- 5 g green basil leaves two, three sprigs of green basil
- salt to taste
- ground black pepper to taste
Instructions
- Peel, wash, and chop the onion. Peel the carrots and cut them in half lengthwise. Then, cut each half into fourths. Place the vegetables in a deep pot with a little oil. Cook over medium heat until the onion softens slightly. Add the tomato juice and two cups of water. Here you can find our recipe for tomato juice without preservatives. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the carrots are tender.
- Cover the pot and simmer for 45 minutes over medium-low heat.Be careful not to overcook the soup, as the carrots will become too soft. Wash the rice thoroughly and add it to the soup. Let it boil for about 5-10 minutes (depends on the rice used). Do not overcook it, as it will continue to cook even after you turn off the heat. Add salt and ground black pepper to taste.
- Finally, turn off the heat and add a few whole sprigs of green basil. Let them steep in the soup for about 20-30 minutes, then remove them. The soup can also be served cold. I also recommend serving it with croutons.Enjoy!

Tips:
- You can use any type of rice for this recipe.
- If you want a thicker soup, you can add a little bit of cornstarch or flour.
- Serve with a side of chopped fresh parsley or cilantro.
