Ingredients
100 g carp roe raw
1 lemon for juice
1 onion
1 tbsp semolina
200 ml water
2 tbsp sparkling water
250 ml sunflower oil
Instructions
Cook the Semolina
- Begin by boiling the water. Once it starts to boil, slowly add the two tablespoons of semolina, stirring constantly to avoid lumps. Let it cook until it thickens to the consistency of polenta, then remove from heat and allow it to cool completely.
Prepare the Roe
- Place the fish roe in a deep, dry bowl. Use a wooden spoon to beat the roe well. Gradually add the vegetable oil in small amounts, mixing continuously. Be patient—adding too much oil at once can cause the roe to "cut," ruining the texture. This step is very similar to making mayonnaise. Once the oil is incorporated, squeeze in the lemon juice.
