The duck comes out wonderfully tender and flavorful, while the potatoes are crispy and golden. Ingredients
4 duck legs
1 kg potatoes
50 g butter
300 ml lager beer
10 garlic cloves
4 sprigs green thyme
4 sprigs rosemary
1 lemon
1/2 tsp salt
1/2 tsp ground black pepper
For the Garlic Sauce
10 garlic cloves
1 tsp honey
30 ml olive oil
1 sprig green thyme
1 sprig rosemary
Instructions
Prepare the Potatoes
- Start by peeling the potatoes, washing them well, and cutting them into slightly thicker slices. Place them in a bowl and season with salt, pepper, fresh thyme, and rosemary. You can also add a bit of olive oil to intensify the flavor. Add the garlic cloves (left whole) and toss everything together. Spread the potatoes evenly in a buttered baking dish.
Prepare the Duck
- Wash the duck legs and score them a few times. Season with salt, thyme, and rosemary. Place the duck on top of the potatoes, with the scored side facing down. Pour the beer and lemon juice over the duck and potatoes. Cover the dish with a lid or aluminum foil and bake in the oven at a medium-low temperature 170 °C (338 °F). Every 30 minutes, check the dish and spoon the juices over the duck to keep it moist. Roast for approximately 3 hours. Toward the end, remove the cover and let the dish cook until the duck and potatoes turn golden brown. Be careful not to overdo it, as the duck can dry out without a cover.
Make the Garlic Sauce
- Peel and crush the garlic cloves, then place them in a bowl. Use a wooden spoon to mash them well. Gradually add olive oil until the mixture reaches a consistency similar to mayonnaise. Add salt to taste and mix thoroughly. Stir in the honey, finely chopped rosemary, and thyme. For a slightly thinner sauce, you can add a splash of still or sparkling water.
Serve
