In fact, grilling meat works the opposite way of roasting in the oven: instead of cooking it slowly over medium or low heat, the meat should be on the grill for as little time as possible at the highest possible temperature.

1 kg boneless pork chops about 2-3 thick cuts
1 tsp salt to taste

Prep the Meat
- Start by cutting the pork into thick slices about 1-2 cm thick. Avoid slicing the meat too thin, or it will dry out! Also, don’t tenderize the meat with a mallet—it’s not necessary for this recipe.
Seasoning
- Place the pork slices in a bowl. Season them with salt, ground black pepper, and any herbs you like (such as thyme, oregano, rosemary). You can also add garlic if you prefer. The key is not to over-season—let the natural flavor of the pork shine through! Gently rub the spices into the meat using your hands. Cover the bowl and let it rest in the fridge for about 30 minutes. If you're outside, just cover the bowl and place it in a cool shaded area.
Preheat the Grill
- Heat your grill well. Once it's nice and hot, take the pork slices from the bowl and place them on the grill. You should hear a sizzle and see smoke. Grill the chops for 3-4 minutes on one side. You’ll know it's time to flip when a pinkish juice starts to form on the top of the meat. Flip the chops carefully and grill them for another 1-2 minutes. The chops are done when the juices form again on top.
Resting
- Once the pork chops are done, remove them from the grill and place them in a glass dish. Cover the dish and let the pork rest for about 5-10 minutes. This resting period will help the meat become even more tender, and the flavor will intensify.
