I have to admit, I was skeptical when my wife started making this cake. However, I always enjoy it when she makes something delicious and sweet, so I encouraged her without hesitation. The result was fantastic; even though it contains very little sugar, it’s sweet enough to be enjoyable. With a slightly creamy texture and a delicate vanilla aroma, it pairs wonderfully with coffee in the morning for those who love it. Let’s see what it’s all about!

Healthy Oat, Apple, and Chocolate Dessert
Combine soaked oats with grated apples, brown sugar, cinnamon, baking powder, raisins, coconut flakes, cocoa, salt, eggs, vanilla, oil, and chopped walnuts, then pour the mixture into a round baking pan and bake at 180°C (350°F) for 40 minutes. While the cake bakes, melt chopped chocolate with a teaspoon of oil over low heat. Once baked, invert the cake onto a plate, drizzle with melted chocolate, and let cool before serving.

Medium
Equipment

1 cake pan
Ingredients
150 g oat flakes
200 ml milk
3 apples
1 tsp brown sugar or other sweetener
1/2 tsp cinnamon powder
2 tbsp cocoa
1/4 tsp salt
2 eggs
8 g vanilla sugar (a packet)
2 tbsp sunflower oil
1 sachet baking powder
20 g coconut flakes
50 g raisins
50 g walnut kernel
100 g dark chocolate
Instructions
- Place the oats in a bowl and pour the milk over them. Stir briefly, then let it sit for 10-15 minutes. This allows the oats to absorb the milk and soften.
- Peel the apples and grate them (or use a food chopper). Add the teaspoon of brown sugar and cinnamon. Of course, you can add more sugar if you prefer, but for us, one teaspoon was sweet enough. Gradually add the cocoa, salt, two eggs, vanilla sugar and oil, stirring well after each addition.
- Add the oats soaked in milk, baking powder, raisins, and coconut flakes. Mix until everything is well combined. You can also use other dried or candied fruits to your liking.
- Chop the walnuts with a knife and spread them on the bottom of a round baking pan. Pour the mixture on top and smooth it out evenly using a spoon or a silicone spatula, whatever you have on hand.
- Place in the oven at 180°C (350°F) for 40 minutes.
- In the meantime, chop the chocolate into smaller pieces for easier melting. If you have a food chopper, you can use it to save time. Place the chopped chocolate in a small pot, add a teaspoon of oil, and melt it over low heat, stirring continuously.
- After the cake has baked, remove it from the oven and turn it out onto a plate. Pour the melted chocolate over the top and let it cool. For a more 'interesting' appearance (as I like to say), I added some extra grated chocolate on top. I admit, I love chocolate! 🙂Enjoy your meal!!!P.S. I also recommend this orange tart; we really enjoy it! 🙂
