Homemade Pork Liver Pâté

The truth is, this homemade pork liver pâté recipe has little in common with the canned pâté you find in stores. This version is much tastier and, of course, healthier. We absolutely love spreading pâté on bread, especially when it’s homemade. On weekends when we stay home, we enjoy various spreads for breakfast, and this pâté is one of our favorites. While this recipe uses pork liver, you can easily substitute it with chicken liver if you prefer. It’s absolutely delicious when fresh and slightly warm—we can hardly stop eating it! It pairs wonderfully with toasted bread.

Soak the Liver

  • Rinse the liver thoroughly and cut it into cubes.
    Place the liver cubes in a large bowl and pour the milk over them until fully submerged.
    Cover and refrigerate for 2–3 hours. This step helps to mellow the liver’s flavor.

Cook the Liver and Onions

  • Peel and finely chop the onions.
    Heat the oil in a frying pan over medium heat and sauté the onions until they become golden and translucent.
    Drain the liver, reserving the milk. Add the liver cubes to the pan with the onions.
    Stir well, cover, and cook on low heat for 10–15 minutes. Add salt and pepper to taste.
    If the mixture becomes too dry, add a little of the reserved milk and continue cooking until the liver is fully cooked and no liquid remains.

Blend and Finish

  • Once slightly cooled, transfer the cooked liver mixture to a blender or food processor.
    Add the butter and blend until smooth and creamy. Adjust salt and pepper to taste, if needed.
    The pâté will be soft while warm but will firm up as it cools.

Serving Suggestions
