- 3 hard-boiled eggs
- 1 egg yolk
- 200 ml sunflower oil
- 1 lemon
- 1 tsp sugar
- 1 tsp mustard
- 1 tsp salt

- Boil two eggs (hard-boiled). Mash the yolks very well with a fork, adding salt (to taste) afterward.
- Add a teaspoon of classic mustard and a teaspoon of sugar (or even less), then continue mixing. Once the ingredients are very well blended, add lemon juice (to taste) and the oil, little by little, while continuously stirring. To mix you can also use a whisk.
- Towards the end, add a raw egg yolk and continue adding oil until you are satisfied with the consistency and quantity. In case the mayonnaise splits, don't worry! Keep stirring in the same direction at a brisk pace, and you can even add another raw egg yolk if needed. Enjoy your meal!
