  • Sort the nettles, removing any impurities, and wash them thoroughly in cold water. Drain them well.
  • Once drained, place the nettles in boiling water and let them cook until they reduce in volume. Once cooked, set them aside.
  • Peel the cloves of garlic, wash them well, and finely chop them. Sauté the garlic briefly in a small amount of oil until fragrant.
  • Add the well-drained nettles to the pan with the garlic and stir continuously to combine.
  • Toward the end, add the cream and the two beaten eggs. Stir everything thoroughly for a few minutes until well combined. Season with salt to taste.
  • This stew pairs wonderfully with fried eggs.
