Oat, cottage cheese and raisin muffins

It seems I’m starting to become a fan of these types of desserts. These muffins are less sweet, easy to make, and healthier just like the oat, apple, and chocolate dessert. Not to mention, they’re super quick to whip up!

Of course, I’m still a fan of pancakes (whether with chocolate or jam, I love both 🙂) and crème brûlée – there’s no question there! But it’s good to try something new now and then, to step out of our comfort zone. When I’m feeling lazy and not in the mood to search for new recipes online, I just stick to the ones I know by heart.

Oat, cottage cheese and raisin muffins

This recipe combines finely ground oats, cottage cheese, sugar, vanilla, egg, raisins, and coconut flakes into a smooth batter. After mixing well, spoon the batter into muffin molds and bake at 180°C for 30 minutes. Allow the muffins to cool before removing from the molds. Enjoy your delicious, homemade treats!

  • Finely grind the oat flakes using a mini chopper. Place the cottage cheese in a bowl, then add the sugar, vanilla, and eggs. Blend everything thoroughly with an immersion blender until smooth.
  • Add the finely ground oats, raisins, and coconut flakes to the mixture. Stir well using a spoon or spatula until everything is well combined.
  • Fill the muffin molds (or a muffin tray) using a teaspoon, and bake for 30 minutes at 180 °C (356 °F). Let them cool, then remove the muffins from the molds or tray. Enjoy!
