It happens quite often that we sit down in the evening with friends, craving something sweet like pancakes with jam. They’re so delicious that we eat until we can’t anymore 🙂. They’re easy to make, but they do take a bit of time. During summer, when it’s really hot outside, it can be tough to stand in the kitchen flipping pancakes. But even so, we wait for evening to come and then we get to work. We sip some lemonade with ice, maybe a cold beer, and solve the problem. We can also fill the pancakes with chocolate cream, ice cream, or other similar treats, but that’s another story.

  • In a tall bowl, whisk the eggs with a whisk, adding sugar and a pinch of salt. Gradually add the flour, mixing continuously with a spoon. As the mixture thickens, add a tablespoon of oil. Keep stirring and slowly pour in the milk. Add the flour gently to avoid lumps. The final batter should be smooth and not too thick nor too runny.
  • Heat a frying pan well and add just a few drops of oil (use a brush to spread it evenly). Pour a ladle of batter into the pan, making sure to cover the whole surface. Avoid adding too much batter to keep the pancakes thin. Once the pancake is golden on one side (check with a spatula to make sure it’s cooking properly), flip it over and cook for a few more seconds. Remove from the pan and repeat with the rest of the batter. Keep the pan well-heated and use as little oil as possible for best results.

  • Once all pancakes are cooked, fill them with your favorite jam. They’re best when slightly warm.
