Pasta (Penne) with tomato sauce

I absolutely love pasta with tomato sauce! Why? Simple! It’s a recipe that’s as easy to make as it is delicious. Even though it’s meatless, these pasta dishes are incredibly tasty and surprisingly filling. You can use any type of pasta: tagliatelle, spaghetti, penne, fusilli, etc. Personally, I prefer penne, but the key is to choose high-quality pasta. If you make your own pasta at home, even better! Cook your pasta in salted water (don’t forget that olive oil drizzle to keep it from getting clingy), then drain—but no cold showers for the pasta! Sauté some garlic until it's just golden, add tomato sauce, seasoning, and let it all simmer like it's on vacation. Finally, toss the pasta with the sauce (or not—if you’re going for presentation points), sprinkle with Parmesan, and enjoy like a pro. 🙂

  • Boil water in a large pot.
    Make sure there’s plenty of water (at least 2 liters). Add salt to the water, and just before it starts to boil, pour in a drizzle of olive oil (this helps prevent the pasta from sticking).
    Once the water reaches a rolling boil, add the pasta and cook according to the time recommended by the manufacturer, usually around 8-10 minutes.
    After the pasta is done, drain it well. Important: Do not rinse it with cold water! To keep the pasta from drying out while it drains, you can cover it with a lid.
  • Peel the garlic, wash it, and finely chop it.
    Sauté it briefly in olive oil, just until the smallest pieces begin to change color and turn slightly golden. Be careful not to burn it, as this will give a bitter taste.
    Add the tomato sauce, salt, and freshly ground black pepper to taste, and let it simmer for a few minutes. You can find here a very tasty tomato sauce recipe without any preservatives.
    You can also add a pinch of hot paprika, chili flakes, or any other spices you prefer. Finally, stir in the freshly chopped basil.
  • Place the pasta on a plate and pour the tomato sauce on top.
    Personally, I like to mix the pasta and sauce together in the pot before serving, though it doesn’t look as fancy. It’s just a bit more practical.
    For extra flavor, you can sprinkle grated Parmesan (the original name being Parmigiano Reggiano, a registered trademark in the European Union).
