Goulash can be prepared either as a soup or a stew. The recipe originates from the time of the Kingdom of Hungary. It’s a dish based on meat, hot paprika, and other spices. Goulash can be made with beef, pork, or lamb. Personally, I find the pork version to be the most convenient, as the cooking time for beef or lamb is significantly longer.

Pork Goulash with Dumplings
This recipe involves preparing a pork goulash by sautéing finely chopped onions and garlic, then browning the diced pork before simmering it in water. Tomato paste and hot paprika are added to the cooked meat, followed by homemade dumplings made from a butter, egg, and flour mixture, which are boiled separately and then combined with the goulash. The dish is gently stirred to keep the dumplings intact and can be served with pickles.

Ingredients
- 1 kg boneless pork chop you can also use neck or leg
- 2 onions
- 5 garlic cloves
- 2 tbsp sunflower oil
- 1 tsp hot paprika powder
- 250 ml tomato paste
- 1 tbsp butter
- 2 eggs
- 2 tbsp wheat flour
Instructions
- Wash the meat thoroughly and cut it into cubes approximately 1 cm (or slightly larger) on each side.
- Peel and wash the onions and garlic, then finely chop them. Sauté them in oil until they start to change color slightly, then add the diced meat. Lightly brown the meat, then add water, cover with a lid, and let it simmer on low heat. Toward the end, you can add a glass of beer or white wine to further tenderize the meat.
- Once the meat is well-cooked, add the tomato paste and hot paprika. Let it simmer for a few more minutes, then turn off the heat.
- Separately, cream the butter with the two eggs, then gradually add flour until you get a batter much thicker than pancake batter. Bring water to a boil and add a teaspoon of salt. Once the water starts boiling, use a teaspoon to drop the batter into the water, forming medium-sized dumplings. Let the dumplings simmer on low heat for about 15 minutes.
- Finally, add the dumplings to the cooked meat in the tomato and paprika sauce. Gently stir, being careful not to break the dumplings. It can be served with pickles. Enjoy your meal!
