Pork Stew with Creamy Mashed Potatoes

700 g pork loin
6 garlic cloves
1 1 cans of diced tomatoes (400g)
1 glass red wine
1 tsp sugar
1 tsp balsamic vinegar cream
4-5 sprigs green thyme
1/3 tsp chili flakes to taste
1/3 tsp salt to taste
1/3 tsp ground black pepper to taste
3 tbsp sunflower oil for frying
For Mashed Potatoes:
600 g potatoes
60 g butter
1 tbsp sour cream
100 ml milk warm
100 g grated parmesan
1/2 tsp salt to taste
Instructions
- Cut the pork into cubes approximately 1-1.5 cm in size.Heat a few tablespoons of sunflower oil in a deep skillet or pot. Add the pork cubes and sauté until lightly browned, being careful not to dry them out.Add the chopped garlic, stirring continuously to avoid burning it, as burnt garlic turns bitter.
- Add the canned tomatoes (cut into smaller pieces if whole), the sugar, and the balsamic vinegar cream. Mix well, cover the pot with a lid, and let everything simmer over low heat for about 45 minutes.
- Test the pork with a fork. If the fork slides in easily, add the glass of red wine and a few sprigs of fresh thyme. Let the thyme infuse for a few minutes, then remove the sprigs.Season the stew with salt, black pepper, and a pinch of dried chili flakes.
Make the Mashed Potatoes:
- Peel the potatoes, wash them thoroughly, and cut them into cubes.
- Boil the potatoes in salted water for about 30 minutes or until tender. Drain the water once they are cooked.
- Mash the potatoes using a fork or potato masher. Add the butter, grated parmesan, and sour cream. Gradually pour in the warm milk, stirring until you achieve a creamy texture. Add salt to taste.
