The pork is simmered to perfection in a rich tomato-based sauce with garlic, fresh thyme, and a splash of red wine, giving it a deep, hearty flavor. To complement the stew, the mashed potatoes are prepared with a luxurious combination of butter, cream, warm milk, and parmesan cheese, resulting in a smooth, velvety texture and an exceptional taste.

While you can stick to a classic mashed potato recipe, these simple additions really elevate the dish, making it indulgent and satisfying. For Mashed Potatoes:

Instructions

  • Cut the pork into cubes approximately 1-1.5 cm in size.Heat a few tablespoons of sunflower oil in a deep skillet or pot. Add the pork cubes and sauté until lightly browned, being careful not to dry them out.
Add the chopped garlic, stirring continuously to avoid burning it, as burnt garlic turns bitter.

  • Add the canned tomatoes (cut into smaller pieces if whole), the sugar, and the balsamic vinegar cream. Mix well, cover the pot with a lid, and let everything simmer over low heat for about 45 minutes.
  • Test the pork with a fork. If the fork slides in easily, add the glass of red wine and a few sprigs of fresh thyme. Let the thyme infuse for a few minutes, then remove the sprigs.
Season the stew with salt, black pepper, and a pinch of dried chili flakes.
