The recipe for roasted potatoes with sausages is as simple as it is delicious. I think most of us love roasted potatoes, and let’s be honest—if there’s some “meat” on the side, they taste even better. As for sauces, these potatoes can be paired with various options: mayonnaise, ketchup, mustard, etc., but nothing quite compares to the classic Romanian garlic sauce.
I know, it might not be the ideal choice before a meeting, and if eaten late at night, it can cause mild stomach discomfort for some of us. That’s why I recommend enjoying this incredibly tasty dish at a reasonable hour.
I suggest using smoked pork sausages, as fresh as possible. If it’s new potato season, that’s even better. Don’t forget the spices—preferably fresh ones.

Roasted Potatoes with Sausages and Garlic Sauce

1 kg potatoes
1/2 kg smoked pork sausages
50 ml olive oil
1 tsp oregano
1 tsp salt
Garlic Sauce
5 garlic cloves
1 tsp sunflower oil or olive oil
1/4 tsp salt
1 tbsp water
Instructions
- Peel the potatoes, wash them thoroughly, and cut them into slightly thick slices. Mix them in a bowl with salt, oregano, olive oil, or other spices you like (basil, thyme, etc.), then place them in a baking dish (preferably glass).
- Bake the potatoes for about 45 minutes at medium heat – 180 °C (356 °F). Add the sausages sliced into medium pieces, and return it to the oven. Depending on the sausages (whether they are smoked or not), bake for an additional 20–30 minutes, until the potatoes start to turn golden brown.
- Peel and wash the garlic cloves, then crush them well and place them in a small bowl. Mix the garlic thoroughly with salt, then add a tablespoon of oil (olive oil can also be used) and a bit of water, just enough to create a slightly runny paste.
- Finally, serve the warm potatoes and sausages on a plate, topped with garlic sauce to taste. You can also sprinkle some freshly chopped parsley or other favorite herbs. This dish pairs perfectly with a cold beer. Enjoy your meal!
