Instructions
Prepare the Chicken and Vegetables
- Begin by thoroughly washing the chicken, cutting it into pieces, and placing it into a large pot to boil. Clean and peel the celery, parsnip, parsley root, potatoes, and two carrots, and add them whole to the pot with the chicken. Let everything cook together for a while, skimming off any foam that forms on the surface with a fine mesh strainer or a slotted spoon. This helps keep your broth clear.Once the chicken is cooked through, remove the vegetables and discard them (they’ve done their job of adding flavor).
Adding the Fresh Veggies
- Take the remaining carrots and the red bell pepper, peel and chop them into small cubes, then add them to the pot with the chicken. Season with salt to taste. Let the mixture simmer for about 30 minutes with the lid on, so the flavors meld together.
