It’s a recipe we got from someone living in Italy, right in the Emilia-Romagna region, one of the most famous areas for gastronomy.

This pasta recipe begins by preparing a rich ragù sauce, followed by cooking the pasta in salted boiling water until al dente. After draining the pasta, it's served with the ragù sauce and topped with grated Parmesan. For a finishing touch, add fresh basil leaves to enhance both the flavor and presentation.

Ingredients
For the Ragu Bolognese Sauce
2 carrots
3 celery ribs
1 onion
2 garlic cloves
50 ml olive oil
250 g minced chicken
250 g minced pork
250 g minced beef
2 fresh raw sausages NOT smoked
150 ml white wine
3 cans of diced tomatoes (400g) (1200g in total)
1 tsp salt to taste
1 tsp ground black pepper to taste

500 g Tagliatelle
100 g grated parmesan
1 tsp olive oil
3 green basil leaves
Instructions
- The first step, and the most challenging one, is making the sauce. You can find the recipe here. If you prefer a lighter version, you can make the sauce using only chicken and a bit of beef—it's up to you.
- Once the sauce is ready, bring a large pot of water to a boil. Make sure there’s plenty of water (at least 2 liters). Add a teaspoon of salt and one with olive oil to the water. When the water starts boiling, add the pasta and cook it according to the time suggested on the package, typically around 8-10 minutes. Once the pasta is done, drain it. We recommend not rinsing it with cold water. To prevent it from drying out, you can cover it with a lid, which will also help keep it from cooling too quickly.
- Once the pasta is drained, serve it onto plates. Spoon the ragù sauce over the pasta, then sprinkle with grated Parmesan. You can also add a couple of fresh basil leaves for a nice touch to the presentation. Enjoy your meal!
