Cook the Tagliatelle

  • Bring a large pot of water (at least 2 liters) to a boil. Add a generous pinch of salt and a drizzle of olive oil to prevent the pasta from sticking.
    Once the water boils, add the tagliatelle and cook according to the package instructions (usually 8–10 minutes).
    Drain the pasta but do not rinse it with cold water. To keep it from drying out, cover it with a lid while preparing the sauce.

Prepare the Sauce

  • Dice the bacon into small cubes (around ½ cm) and sauté in a pan with olive oil over medium heat. Cook until the bacon begins to crisp and turn golden.
    Mince the garlic finely and add it to the pan with the bacon. Sauté until the garlic becomes fragrant and lightly golden.

For a fresh touch, tear a few basil leaves and stir them into the sauce. Let the sauce simmer for a few minutes until it thickens slightly.

Combine and Serve

  • Plate the tagliatelle and generously spoon the tomato and bacon sauce over the top.
