  • Begin by cleaning and washing the potatoes thoroughly. Then, chop them into cubes and place them in a pot of salted water. Let them boil for about 15 minutes until they are soft but not too mushy (we want them to hold their shape). You can check them with a fork to make sure they are just right. Once cooked, drain the potatoes and let them cool completely. After they’ve cooled down, place them in a large mixing bowl.
  • While the potatoes are cooling, place the eggs in a separate pot and bring them to a boil. Let them cook for about 10 minutes until they are fully hard-boiled. Once done, remove them from the heat and allow them to cool. Peel the eggs and chop them into small cubes. Add them to the cooled potatoes.
  • Peel and chop the onion into thin strips, and cut the pickled peppers (or cucumbers) into small cubes. Add both the onions and pickles to the bowl with the potatoes and eggs.
  • Add salt and pepper to taste. If you prefer a tangier flavor, feel free to add a squeeze of lemon juice. Gently mix all the ingredients together to combine.
