Vegan Vegetable Puff Pastries
These vegan vegetable puff pastries are deliciously flavorful, even without any meat. Easy to make with puff pastry and a simple vegetable filling, they’re perfect for any occasion—whether you're observing a fast or just want a healthy, tasty snack. Ingredients
800 g puff pastry 1 pack
400 g wild mushrooms or your preferred type
5 red bell peppers
200 g onion
5 garlic cloves
2 carrots
1 tbsp wheat flour
50 ml sunflower oil or olive oil
1/2 tsp salt
1/3 tsp ground black pepper
Instructions
Prepare the vegetables
- Peel and wash the onion, carrot, and garlic. Then, finely chop them. Cut the mushrooms and bell peppers into slightly larger cubes (about 1/2 – 1 cm).
Cook the vegetables
- Heat oil in a pan and sauté the onion, garlic, carrots, and mushrooms. Once the vegetables soften and the onion and garlic start to change color, add the bell peppers. Towards the end of cooking, add the flour to help bind the mixture together. If desired, you can also add one or two eggs (though this will make the recipe no longer vegan). Season with salt and pepper to taste and stir for another 2-3 minutes.
Assemble the pastries
- Roll out the puff pastry on a flat surface and cut it into squares, each about 10 cm in size. Place a tablespoon of the vegetable mixture in the center of each square. Fold the opposite corners of each square to form triangles, sealing the edges well with your fingers. Place the pastries on a baking sheet, leaving at least 1 cm of space between them to prevent them from sticking together. For best results, line the baking sheet with parchment paper.
Bake the pastries
- Preheat the oven to medium heat. Bake the pastries for about 30 minutes, or until they are golden brown and crispy.These pastries can be enjoyed hot or cold, at room temperature.Bon appétit!
